  • Cooked jasmine rice - 300 grams
  • Vegetarian shrimp (or plant-based seafood) - 100 grams
  • Firm tofu, diced - 100 grams
  • Green peas - 50 grams
  • Carrot, diced - 1 small (about 50 grams)
  • Red bell pepper, diced - 1 small (about 50 grams)
  • Spring onions, chopped - 2 (about 30 grams)
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Vegetable broth - 50 ml
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes (optional) - to taste

Steps

  1. In a large pan or wok, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant, about 1 minute.
  2. Add the diced tofu and vegetarian shrimp to the pan, cooking until the tofu is golden brown and the vegetarian shrimp is heated through, about 5-7 minutes.
  3. Stir in the diced carrots and red bell pepper, cooking for another 3-4 minutes until they start to soften.
  4. Add the green peas and cooked jasmine rice to the pan, mixing well to combine all ingredients.
  5. Pour the soy sauce and vegetable broth over the rice mixture. Stir well to ensure even distribution. Season with salt, black pepper, and chili flakes if desired.
  6. Cook for an additional 5-7 minutes, stirring occasionally, until everything is heated through and the flavors meld together.
  7. Garnish with chopped spring onions before serving.
