  • All-purpose flour - 200 grams
  • Boiling water - 120 milliliters
  • Scallions (green onions) - 4, finely chopped
  • Salt - 1/2 teaspoon
  • Vegetable oil - 3 tablespoons (for frying)
  • Sesame oil - 1 tablespoon

Steps

  1. In a mixing bowl, combine the flour and salt. Gradually add the boiling water while stirring with chopsticks or a fork until the dough comes together.
  2. Knead the dough on a lightly floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
  3. Divide the dough into two equal parts. Roll out one portion into a thin circle (approximately 20 cm in diameter).
  4. Brush a thin layer of sesame oil over the dough circle, then sprinkle half of the chopped scallions evenly on top.
  5. Starting from one edge, roll the dough tightly into a log. Then coil the log into a spiral shape, tucking the end underneath. Flatten gently with your palm.
  6. Roll out the coiled dough again into a circle about 1 cm thick. Repeat the same process with the second portion of dough.
  7. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Fry one pancake for 3-4 minutes on each side, or until golden brown and crispy. Repeat with the second pancake.
  8. Remove from the skillet and drain on paper towels. Cut into wedges and serve warm.
