- Boiling water - 120 milliliters
- Scallions (green onions) - 4, finely chopped
- Salt - 1/2 teaspoon
- Vegetable oil - 3 tablespoons (for frying)
- Sesame oil - 1 tablespoon
Steps
- In a mixing bowl, combine the flour and salt. Gradually add the boiling water while stirring with chopsticks or a fork until the dough comes together.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
- Divide the dough into two equal parts. Roll out one portion into a thin circle (approximately 20 cm in diameter).
- Brush a thin layer of sesame oil over the dough circle, then sprinkle half of the chopped scallions evenly on top.
- Starting from one edge, roll the dough tightly into a log. Then coil the log into a spiral shape, tucking the end underneath. Flatten gently with your palm.
- Roll out the coiled dough again into a circle about 1 cm thick. Repeat the same process with the second portion of dough.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Fry one pancake for 3-4 minutes on each side, or until golden brown and crispy. Repeat with the second pancake.
- Remove from the skillet and drain on paper towels. Cut into wedges and serve warm.
