Ingredients

  • Silken tofu - 300 grams
  • Vegetable oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Sichuan peppercorns - 1 teaspoon
  • Fermented black beans, rinsed and chopped - 2 tablespoons
  • Red chili paste - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Vegetable broth - 200 ml
  • Cornstarch - 1 tablespoon
  • Water - 2 tablespoons
  • Green onions, sliced - 2 tablespoons
  • Sesame oil - 1 teaspoon

Steps

  1. Drain the silken tofu and cut it into 1-inch cubes. Set aside.
  2. In a pan, heat the vegetable oil over medium heat. Add the minced garlic, minced ginger, and Sichuan peppercorns, cooking until fragrant (about 1 minute).
  3. Add the chopped fermented black beans and red chili paste to the pan, stir-frying for another 2 minutes.
  4. Pour in the vegetable broth and soy sauce, bringing the mixture to a gentle simmer.
  5. Gently add the tofu cubes to the pan, being careful not to break them, and simmer for about 5-7 minutes to allow the flavors to meld.
  6. In a small bowl, mix the cornstarch with water to create a slurry. Gradually add this to the pan, stirring gently until the sauce thickens.
  7. Remove from heat, drizzle with sesame oil, and garnish with sliced green onions before serving.
