- Silken tofu - 300 grams
- Vegetable oil - 2 tablespoons
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Sichuan peppercorns - 1 teaspoon
- Fermented black beans, rinsed and chopped - 2 tablespoons
- Red chili paste - 1 tablespoon
- Soy sauce - 1 tablespoon
- Vegetable broth - 200 ml
- Cornstarch - 1 tablespoon
- Water - 2 tablespoons
- Green onions, sliced - 2 tablespoons
- Sesame oil - 1 teaspoon
Steps
- Drain the silken tofu and cut it into 1-inch cubes. Set aside.
- In a pan, heat the vegetable oil over medium heat. Add the minced garlic, minced ginger, and Sichuan peppercorns, cooking until fragrant (about 1 minute).
- Add the chopped fermented black beans and red chili paste to the pan, stir-frying for another 2 minutes.
- Pour in the vegetable broth and soy sauce, bringing the mixture to a gentle simmer.
- Gently add the tofu cubes to the pan, being careful not to break them, and simmer for about 5-7 minutes to allow the flavors to meld.
- In a small bowl, mix the cornstarch with water to create a slurry. Gradually add this to the pan, stirring gently until the sauce thickens.
- Remove from heat, drizzle with sesame oil, and garnish with sliced green onions before serving.
