- Firm tofu - 200 grams
- Carrot - 50 grams, grated
- Green onion - 2 stalks, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Cornstarch - 2 tablespoons
- Breadcrumbs - 50 grams
- Vegetable broth - 500 ml
- Baby bok choy - 100 grams
- Salt - to taste
- Black pepper - to taste
Steps
- Soak the shiitake mushrooms in warm water for 20 minutes, then drain and chop finely.
- In a large bowl, crumble the firm tofu and add the chopped shiitake mushrooms, grated carrot, chopped green onion, minced garlic, grated ginger, soy sauce, sesame oil, cornstarch, breadcrumbs, salt, and pepper.
- Mix the ingredients thoroughly until combined, then shape the mixture into 4 large meatballs.
- In a large skillet, heat a little oil over medium heat and sear the meatballs for about 3-4 minutes on each side until golden brown.
- Once the meatballs are browned, add the vegetable broth to the skillet and bring to a simmer.
- Add the baby bok choy to the broth and cover the skillet. Let it simmer for an additional 15 minutes.
- Serve the meatballs hot in a bowl with the broth and bok choy, garnished with extra green onions if desired.
