Ingredients

  • Chinese eggplant - 400 grams
  • Vegetable oil - 3 tablespoons
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Green onion - 2 stalks, chopped
  • Red bell pepper - 1, diced
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sugar - 1 teaspoon
  • Doubanjiang (fermented bean paste) - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Water - 100 ml
  • Sesame oil - 1 teaspoon
  • Salt - to taste

Steps

  1. Wash and cut the Chinese eggplant into long strips, about 1 cm thick. Soak them in salted water for 10 minutes to reduce bitterness, then drain and pat dry.
  2. Heat 2 tablespoons of vegetable oil in a large pan or wok over medium heat. Add the eggplant and stir-fry for about 5-7 minutes until they are golden and tender. Remove the eggplant from the pan and set aside.
  3. In the same pan, add the remaining tablespoon of vegetable oil. Add minced garlic, ginger, and chopped green onion, and sauté for 1-2 minutes until fragrant.
  4. Add the diced red bell pepper and continue to stir-fry for another 2-3 minutes until slightly softened.
  5. Combine soy sauce, rice vinegar, sugar, doubanjiang, cornstarch, and water in a small bowl and mix well. Pour this sauce into the pan and bring to a simmer.
  6. Add the cooked eggplant back to the pan and stir well to coat in the sauce. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  7. Drizzle with sesame oil, adjust seasoning with salt if needed, and give it a final stir before serving.
