Ingredients
- Chinese eggplant - 400 grams
- Vegetable oil - 3 tablespoons
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, minced
- Green onion - 2 stalks, chopped
- Red bell pepper - 1, diced
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sugar - 1 teaspoon
- Doubanjiang (fermented bean paste) - 1 tablespoon
- Cornstarch - 1 teaspoon
- Water - 100 ml
- Sesame oil - 1 teaspoon
- Salt - to taste
Steps
- Wash and cut the Chinese eggplant into long strips, about 1 cm thick. Soak them in salted water for 10 minutes to reduce bitterness, then drain and pat dry.
- Heat 2 tablespoons of vegetable oil in a large pan or wok over medium heat. Add the eggplant and stir-fry for about 5-7 minutes until they are golden and tender. Remove the eggplant from the pan and set aside.
- In the same pan, add the remaining tablespoon of vegetable oil. Add minced garlic, ginger, and chopped green onion, and sauté for 1-2 minutes until fragrant.
- Add the diced red bell pepper and continue to stir-fry for another 2-3 minutes until slightly softened.
- Combine soy sauce, rice vinegar, sugar, doubanjiang, cornstarch, and water in a small bowl and mix well. Pour this sauce into the pan and bring to a simmer.
- Add the cooked eggplant back to the pan and stir well to coat in the sauce. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
- Drizzle with sesame oil, adjust seasoning with salt if needed, and give it a final stir before serving.
