Ingredients
- All-purpose flour - 200 grams
- Cold water - 100 ml
- Salt - 1/2 teaspoon
- Vegetable oil - 50 ml
- Potato - 1 medium (150 grams), peeled and diced
- Carrot - 1 medium (100 grams), diced
- Green peas - 50 grams (fresh or frozen)
- Onion - 1 small (50 grams), finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Curry powder - 1 teaspoon
- Soy sauce - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Black pepper - 1/4 teaspoon
Steps
- In a large bowl, mix the all-purpose flour, salt, and vegetable oil until crumbly. Gradually add cold water until a dough forms. Knead for 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
- In a saucepan, boil diced potatoes and carrots until tender, about 10 minutes. Drain and set aside.
- In the same saucepan, heat a little oil over medium heat. Sauté the onions, garlic, and ginger until fragrant. Add the boiled potatoes, carrots, green peas, curry powder, soy sauce, and black pepper. Mix well and cook for another 5 minutes. Stir in chopped cilantro and let cool.
- Preheat the oven to 180°C (350°F). Divide the dough into 4 equal parts. Roll each part into a thin circle about 10 cm in diameter.
- Place a spoonful of the vegetable filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for extra security.
- Place the curry puffs on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown. Serve warm.
