Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Bell pepper (red or yellow) - 1 medium, diced
  • Broccoli florets - 100 grams
  • Green peas - 50 grams
  • Soy sauce - 2 tablespoons
  • Oyster sauce (vegetarian) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Spring onions - 2, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it for 20 minutes.
  2. In a claypot or a heavy-bottomed pan, heat 1 tablespoon of sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté until fragrant.
  3. Add the sliced mushrooms, julienned carrots, diced bell pepper, and broccoli florets to the pot. Stir-fry for about 5 minutes until the vegetables are slightly tender.
  4. Drain the soaked rice and add it to the pot with the sautéed vegetables. Pour in 300 ml of water, soy sauce, and oyster sauce. Stir gently to combine.
  5. Cover the pot and bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, or until the rice is cooked and the water is absorbed.
  6. Once cooked, remove from heat and let it sit covered for another 5 minutes to allow the flavors to meld.
  7. Fluff the rice with a fork, season with salt and pepper to taste, and garnish with chopped spring onions before serving.
