- Carrot - 1 medium, julienned
- Bell pepper (red or yellow) - 1 medium, diced
- Broccoli florets - 100 grams
- Green peas - 50 grams
- Soy sauce - 2 tablespoons
- Oyster sauce (vegetarian) - 1 tablespoon
- Sesame oil - 1 teaspoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Spring onions - 2, chopped
- Salt - to taste

Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it for 20 minutes.
- In a claypot or a heavy-bottomed pan, heat 1 tablespoon of sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté until fragrant.
- Add the sliced mushrooms, julienned carrots, diced bell pepper, and broccoli florets to the pot. Stir-fry for about 5 minutes until the vegetables are slightly tender.
- Drain the soaked rice and add it to the pot with the sautéed vegetables. Pour in 300 ml of water, soy sauce, and oyster sauce. Stir gently to combine.
- Cover the pot and bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, or until the rice is cooked and the water is absorbed.
- Once cooked, remove from heat and let it sit covered for another 5 minutes to allow the flavors to meld.
- Fluff the rice with a fork, season with salt and pepper to taste, and garnish with chopped spring onions before serving.
