Ingredients

  • Shiitake mushrooms - 100 grams, sliced
  • King oyster mushrooms - 100 grams, sliced
  • Firm tofu - 200 grams, cubed
  • Carrot - 1 medium, julienned
  • Snow peas - 100 grams, trimmed
  • Bamboo shoots - 50 grams, sliced
  • Vegetarian oyster sauce - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable broth - 300 ml
  • Cornstarch - 1 tablespoon (mixed with 2 tablespoons water)
  • Fresh ginger - 1 teaspoon, minced
  • Garlic - 2 cloves, minced
  • Spring onions - 2, chopped for garnish
  • Cilantro - a handful, for garnish

Steps

  1. In a large skillet or wok, heat the sesame oil over medium heat and sauté the minced garlic and ginger until fragrant, about 1 minute.
  2. Add the sliced shiitake mushrooms and king oyster mushrooms, cooking for 3-4 minutes until softened.
  3. Stir in the julienned carrot, snow peas, and bamboo shoots, and cook for an additional 3 minutes until the vegetables are slightly tender.
  4. Add the cubed tofu to the pan, followed by the vegetarian oyster sauce, soy sauce, and vegetable broth. Stir well to combine.
  5. Bring the mixture to a gentle simmer and let it cook for about 5 minutes, allowing the flavors to meld.
  6. Stir in the cornstarch mixture to thicken the sauce, cooking for another 2-3 minutes until the sauce is glossy and coats the vegetables and tofu.
  7. Remove from heat and garnish with chopped spring onions and cilantro before serving.
