Ingredients
- Firm tofu - 200 grams
- Black beans (canned) - 1 cup (240 grams), drained and rinsed
- Garlic - 2 cloves, minced
- Ginger - 1 inch piece, grated
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Green onions - 2 stalks, chopped
- Bell pepper - 1 medium, diced
- Carrot - 1 medium, julienned
- Red chili flakes - 1/2 teaspoon (optional)
- Salt - to taste
- Black pepper - to taste
Steps
- Press the firm tofu for about 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
- In a bowl, toss the tofu cubes with cornstarch until well coated.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium-high heat. Add the tofu and pan-fry until golden brown on all sides, about 8-10 minutes. Remove and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the minced garlic and grated ginger for about 30 seconds until fragrant.
- Add the diced bell pepper and julienned carrot, cooking for 3-4 minutes until slightly tender.
- Stir in the black beans, cooked tofu, soy sauce, sesame oil, and red chili flakes (if using). Cook for another 3-4 minutes, mixing gently to combine all ingredients. Season with salt and black pepper to taste.
- Garnish with chopped green onions and serve hot.
