Ingredients

  • Firm tofu - 200 grams
  • Black beans (canned) - 1 cup (240 grams), drained and rinsed
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch piece, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Green onions - 2 stalks, chopped
  • Bell pepper - 1 medium, diced
  • Carrot - 1 medium, julienned
  • Red chili flakes - 1/2 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Press the firm tofu for about 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
  2. In a bowl, toss the tofu cubes with cornstarch until well coated.
  3. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium-high heat. Add the tofu and pan-fry until golden brown on all sides, about 8-10 minutes. Remove and set aside.
  4. In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the minced garlic and grated ginger for about 30 seconds until fragrant.
  5. Add the diced bell pepper and julienned carrot, cooking for 3-4 minutes until slightly tender.
  6. Stir in the black beans, cooked tofu, soy sauce, sesame oil, and red chili flakes (if using). Cook for another 3-4 minutes, mixing gently to combine all ingredients. Season with salt and black pepper to taste.
  7. Garnish with chopped green onions and serve hot.
