Steps
- Cook the udon noodles according to the package instructions, then drain and set aside.
- In a large pan or wok, heat the sesame oil over medium heat.
- Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
- Add the julienned carrot, sliced bell pepper, broccoli florets, and snow peas to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
- Pour in the soy sauce and vegetable broth, stirring to combine. If using cornstarch, mix it with a bit of water and add it to the pan to thicken the sauce.
