  • Peanut butter - 3 tablespoons
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Honey - 1 tablespoon (or maple syrup for vegan option)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Lime juice - 1 tablespoon
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a bowl, whisk together peanut butter, soy sauce, sesame oil, honey, minced garlic, grated ginger, and lime juice to create the marinade.
  2. Add the chopped vegetables (bell pepper, zucchini, mushrooms, red onion, and carrot) to the marinade. Toss well to coat and let sit for at least 15 minutes.
  3. Preheat a grill or grill pan over medium heat.
  4. Thread the marinated vegetables onto the skewers, packing them tightly.
  5. Grill the skewers for about 10-15 minutes, turning occasionally, until the vegetables are tender and have grill marks.
