- Honey - 1 tablespoon (or maple syrup for vegan option)
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Lime juice - 1 tablespoon
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- In a bowl, whisk together peanut butter, soy sauce, sesame oil, honey, minced garlic, grated ginger, and lime juice to create the marinade.
- Add the chopped vegetables (bell pepper, zucchini, mushrooms, red onion, and carrot) to the marinade. Toss well to coat and let sit for at least 15 minutes.
- Preheat a grill or grill pan over medium heat.
- Thread the marinated vegetables onto the skewers, packing them tightly.
