  • Rice paper sheets - 4
  • Cooked jasmine rice - 100 grams
  • Carrot, julienned - 50 grams
  • Cucumber, julienned - 50 grams
  • Bell pepper, thinly sliced - 50 grams
  • Spring onion, finely chopped - 2 stalks
  • Fresh coriander leaves - 20 grams
  • Soy sauce (gluten-free) - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Prepare all vegetables by washing and cutting them into thin strips or julienne.
  2. In a bowl, mix the cooked jasmine rice with the soy sauce, sesame oil, and lemon juice.
  3. Soak one rice paper sheet in warm water for about 10-15 seconds until it becomes soft and pliable.
  4. Place the soaked rice paper on a clean surface and add a small amount of the rice mixture in the center, followed by a handful of the prepared vegetables and some coriander leaves.
  5. Fold the sides of the rice paper over the filling, then roll it tightly from the bottom to the top to form a roll.
  6. Repeat the process for the remaining rice paper sheets and filling.
  7. Serve the vegetable rice rolls with additional soy sauce for dipping.
