Vegetable Potstickers

Ingredients

  • all-purpose flour - 120 grams
  • water - 60 ml
  • cabbage - 100 grams, finely chopped
  • carrot - 50 grams, grated
  • shiitake mushrooms - 50 grams, finely chopped
  • green onion - 2 stalks, finely chopped
  • garlic - 2 cloves, minced
  • ginger - 1 teaspoon, grated
  • soy sauce - 1 tablespoon
  • sesame oil - 1 teaspoon
  • black pepper - 1/4 teaspoon
  • salt - 1/4 teaspoon
  • oil - for frying

Steps

  1. In a mixing bowl, combine the all-purpose flour and water to form a dough. Knead for about 5 minutes until smooth, then cover with a damp cloth and let it rest for 20 minutes.
  2. In a separate bowl, mix the chopped cabbage, grated carrot, shiitake mushrooms, green onion, minced garlic, grated ginger, soy sauce, sesame oil, black pepper, and salt until well combined.
  3. Divide the rested dough into small balls, approximately the size of a golf ball. Roll each ball into a thin circle, about 10 cm in diameter.
  4. Place a spoonful of the vegetable filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges to seal tightly.
  5. Heat a non-stick skillet over medium heat and add a small amount of oil. Once hot, place the potstickers in the skillet, making sure they are not touching.
  6. Fry the potstickers for about 2-3 minutes until the bottoms are golden brown. Add a splash of water (about 60 ml) to the skillet and cover immediately to steam the potstickers for an additional 5 minutes.
  7. Remove the lid and continue cooking for another 2 minutes to allow excess water to evaporate and the bottoms to crisp up again.
  8. Serve hot with soy sauce or a vinegar-based dipping sauce.
