Vegetable Potstickers

Ingredients
- all-purpose flour - 120 grams
- water - 60 ml
- cabbage - 100 grams, finely chopped
- carrot - 50 grams, grated
- shiitake mushrooms - 50 grams, finely chopped
- green onion - 2 stalks, finely chopped
- garlic - 2 cloves, minced
- ginger - 1 teaspoon, grated
- soy sauce - 1 tablespoon
- sesame oil - 1 teaspoon
- black pepper - 1/4 teaspoon
- salt - 1/4 teaspoon
- oil - for frying
Steps
- In a mixing bowl, combine the all-purpose flour and water to form a dough. Knead for about 5 minutes until smooth, then cover with a damp cloth and let it rest for 20 minutes.
- In a separate bowl, mix the chopped cabbage, grated carrot, shiitake mushrooms, green onion, minced garlic, grated ginger, soy sauce, sesame oil, black pepper, and salt until well combined.
- Divide the rested dough into small balls, approximately the size of a golf ball. Roll each ball into a thin circle, about 10 cm in diameter.
- Place a spoonful of the vegetable filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges to seal tightly.
- Heat a non-stick skillet over medium heat and add a small amount of oil. Once hot, place the potstickers in the skillet, making sure they are not touching.
- Fry the potstickers for about 2-3 minutes until the bottoms are golden brown. Add a splash of water (about 60 ml) to the skillet and cover immediately to steam the potstickers for an additional 5 minutes.
- Remove the lid and continue cooking for another 2 minutes to allow excess water to evaporate and the bottoms to crisp up again.
- Serve hot with soy sauce or a vinegar-based dipping sauce.
