Ingredients

  • All-purpose flour - 100g
  • Water - 150ml
  • Salt - 1/2 tsp
  • Green onions - 2, finely chopped
  • Carrot - 1 medium, grated
  • Bell pepper - 1/2, diced
  • Mushrooms - 100g, sliced
  • Spinach - 50g, chopped
  • Soy sauce - 1 tbsp
  • Sesame oil - 1 tbsp
  • Shredded mozzarella cheese - 100g
  • Olive oil - 2 tbsp
  • Chili flakes - 1 tsp (optional)

Steps

  1. In a mixing bowl, combine the all-purpose flour, water, and salt to create a smooth batter. Let it rest for 10 minutes.
  2. Add the chopped green onions, grated carrot, diced bell pepper, sliced mushrooms, and chopped spinach into the batter. Mix until well combined.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Pour half of the batter into the skillet, spreading it evenly to form a pancake.
  4. Cook the pancake for about 3-4 minutes until the bottom is golden brown. Flip it carefully and cook for another 3-4 minutes on the other side. Remove from the skillet and repeat with the remaining batter.
  5. Preheat the oven to 200°C (400°F).
  6. Place the cooked pancakes on a baking sheet. Drizzle each pancake with soy sauce and sesame oil, then sprinkle shredded mozzarella cheese on top.
  7. If using, sprinkle chili flakes over the cheese for added spice.
  8. Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven, slice into wedges, and serve hot.
