- All-purpose flour - 100g
- Water - 150ml
- Salt - 1/2 tsp
- Green onions - 2, finely chopped
- Carrot - 1 medium, grated
- Bell pepper - 1/2, diced
- Mushrooms - 100g, sliced
- Spinach - 50g, chopped
- Soy sauce - 1 tbsp
- Sesame oil - 1 tbsp
- Shredded mozzarella cheese - 100g
- Olive oil - 2 tbsp
- Chili flakes - 1 tsp (optional)
Steps
- In a mixing bowl, combine the all-purpose flour, water, and salt to create a smooth batter. Let it rest for 10 minutes.
- Add the chopped green onions, grated carrot, diced bell pepper, sliced mushrooms, and chopped spinach into the batter. Mix until well combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Pour half of the batter into the skillet, spreading it evenly to form a pancake.
- Cook the pancake for about 3-4 minutes until the bottom is golden brown. Flip it carefully and cook for another 3-4 minutes on the other side. Remove from the skillet and repeat with the remaining batter.
- Preheat the oven to 200°C (400°F).
- Place the cooked pancakes on a baking sheet. Drizzle each pancake with soy sauce and sesame oil, then sprinkle shredded mozzarella cheese on top.
- If using, sprinkle chili flakes over the cheese for added spice.
- Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, slice into wedges, and serve hot.
