- Water - 200ml
- Sesame oil - 2 tablespoons
- Green onions - 2, finely chopped
- Bell pepper - 1, diced
- Carrot - 1, grated
- Spinach - 50g, chopped
- Soy sauce - 1 tablespoon
- Chili sauce - 1 tablespoon (adjust to taste)
- Mozzarella cheese - 100g, shredded (optional for non-vegan version)
- Fresh cilantro - for garnish
Steps
- In a mixing bowl, combine the brown rice flour, tapioca flour, and water to form a smooth batter. Let it sit for 10 minutes.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of sesame oil.
- Pour half of the batter into the skillet, swirling to create a thin, even layer. Cook for about 2-3 minutes until the edges lift and the surface is set.
- Crack 1 egg on top of the batter and spread it evenly. Sprinkle with half of the green onions, diced bell pepper, grated carrot, and chopped spinach. Drizzle with soy sauce and chili sauce.
- If using, add half of the mozzarella cheese on top. Cook for another 2-3 minutes until the cheese is melted and the base is crispy.
- Carefully fold the jianbing pizza in half and transfer it to a plate. Repeat the process with the remaining batter and toppings to make the second pizza.
