- Egg - 1 large
- Carrot - 50 grams, grated
- Cucumber - 50 grams, julienned
- Bell pepper (red or yellow) - 50 grams, thinly sliced
- Green onion - 2 stalks, finely chopped
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Vegetable oil - for frying
- Fresh cilantro - a handful, chopped
- Black sesame seeds - 1 teaspoon (optional)
Steps
- In a mixing bowl, combine the all-purpose flour, water, and salt to create a smooth batter. Let it rest for 10 minutes.
- Whisk the egg into the batter until well combined.
- Heat a non-stick skillet over medium heat and add a little vegetable oil. Pour a ladle of the batter into the skillet, swirling to cover the bottom evenly. Cook for 1-2 minutes until the edges begin to lift.
- Carefully flip the crepe and cook for an additional minute. Transfer to a plate and repeat with the remaining batter, adding oil as needed.
- In a bowl, mix the grated carrot, julienned cucumber, sliced bell pepper, chopped green onion, soy sauce, sesame oil, and cilantro.
- Place some of the vegetable mixture in the center of each crepe. Fold the sides over to form a wrap or burger shape.
- Sprinkle with black sesame seeds if using, and serve warm.
