Ingredients

  • All-purpose flour - 100 grams
  • Water - 200 milliliters

  • Egg - 1 large
  • Carrot - 50 grams, grated
  • Cucumber - 50 grams, julienned
  • Bell pepper (red or yellow) - 50 grams, thinly sliced
  • Green onion - 2 stalks, finely chopped
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Vegetable oil - for frying
  • Fresh cilantro - a handful, chopped
  • Black sesame seeds - 1 teaspoon (optional)

Steps

  1. In a mixing bowl, combine the all-purpose flour, water, and salt to create a smooth batter. Let it rest for 10 minutes.
  2. Whisk the egg into the batter until well combined.
  3. Heat a non-stick skillet over medium heat and add a little vegetable oil. Pour a ladle of the batter into the skillet, swirling to cover the bottom evenly. Cook for 1-2 minutes until the edges begin to lift.
  4. Carefully flip the crepe and cook for an additional minute. Transfer to a plate and repeat with the remaining batter, adding oil as needed.
  5. In a bowl, mix the grated carrot, julienned cucumber, sliced bell pepper, chopped green onion, soy sauce, sesame oil, and cilantro.
  6. Place some of the vegetable mixture in the center of each crepe. Fold the sides over to form a wrap or burger shape.
  7. Sprinkle with black sesame seeds if using, and serve warm.
