Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 125 ml
  • Active dry yeast - 5 grams
  • Sugar - 10 grams
  • Salt - 3 grams
  • Vegetable oil - 15 ml
  • Cabbage - 100 grams, finely chopped
  • Carrot - 50 grams, grated
  • Mushrooms - 50 grams, finely chopped
  • Spring onion - 2, finely sliced
  • Soy sauce - 10 ml
  • Sesame oil - 5 ml
  • Ginger - 5 grams, minced
  • Garlic - 2 grams, minced

Steps

  1. In a small bowl, combine warm water, yeast, and sugar. Let it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and vegetable oil.
  3. Knead the mixture until a smooth dough forms, about 10 minutes. Cover with a damp cloth and let it rise in a warm place for 30 minutes or until doubled in size.
  4. In the meantime, prepare the filling. Heat a pan over medium heat, add a bit of oil, and sauté garlic and ginger until fragrant.
  5. Add the chopped cabbage, grated carrot, and mushrooms to the pan. Stir-fry for 5-7 minutes until vegetables are softened. Add spring onion, soy sauce, and sesame oil, mix well, and remove from heat.
  6. Once the dough has risen, punch it down and knead briefly. Divide the dough into 6 equal pieces and roll each piece into a ball.
  7. Flatten each ball into a disc, about 10 cm in diameter. Place a spoonful of the vegetable filling in the center of each disc.
  8. Carefully gather the edges of the dough around the filling and pinch to seal. Place the filled buns on parchment paper squares.
  9. Set up a steamer over boiling water and steam the buns for about 15 minutes until fluffy and cooked through.
  10. Serve warm with soy sauce or chili oil for dipping.
