Ingredients
- Tofu - 200 grams, firm
- Brown rice - 150 grams (uncooked)
- Bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Broccoli - 150 grams, cut into florets
- Snow peas - 100 grams
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce (gluten-free) - 3 tablespoons
- Sesame oil - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Green onions - 2, sliced
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Cook the brown rice according to package instructions, typically about 20 minutes.
- While the rice is cooking, press the tofu to remove excess moisture, then cut it into cubes.
- In a bowl, toss the tofu cubes with cornstarch until evenly coated.
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the tofu and cook until golden brown, about 5-7 minutes. Remove the tofu and set aside.
- In the same pan, add the remaining tablespoon of vegetable oil. Add minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.
- Add the sliced bell pepper, julienned carrot, broccoli florets, and snow peas to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
- Return the cooked tofu to the pan with the vegetables. Pour in the gluten-free soy sauce and sesame oil, stirring well to combine. Cook for an additional 2-3 minutes.
- Serve the stir-fry over the cooked brown rice, garnishing with sliced green onions and sesame seeds.
