Ingredients

  • Tofu - 200 grams, firm
  • Brown rice - 150 grams (uncooked)
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Broccoli - 150 grams, cut into florets
  • Snow peas - 100 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce (gluten-free) - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Green onions - 2, sliced
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Cook the brown rice according to package instructions, typically about 20 minutes.
  2. While the rice is cooking, press the tofu to remove excess moisture, then cut it into cubes.
  3. In a bowl, toss the tofu cubes with cornstarch until evenly coated.
  4. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the tofu and cook until golden brown, about 5-7 minutes. Remove the tofu and set aside.
  5. In the same pan, add the remaining tablespoon of vegetable oil. Add minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.
  6. Add the sliced bell pepper, julienned carrot, broccoli florets, and snow peas to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
  7. Return the cooked tofu to the pan with the vegetables. Pour in the gluten-free soy sauce and sesame oil, stirring well to combine. Cook for an additional 2-3 minutes.
  8. Serve the stir-fry over the cooked brown rice, garnishing with sliced green onions and sesame seeds.
