Ingredients

  • Jasmine rice - 150 grams
  • Firm tofu - 200 grams
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Green peas - 100 grams (fresh or frozen)
  • Spring onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 30 ml
  • Sesame oil - 15 ml
  • Vegetable oil - 15 ml
  • Ginger - 1 teaspoon, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook according to package instructions (usually about 15 minutes).
  2. While the rice is cooking, drain the tofu and press it between paper towels to remove excess moisture, then cut it into small cubes.
  3. In a large pan or wok, heat the vegetable oil over medium-high heat and add the cubed tofu. Cook until golden brown on all sides, about 5-7 minutes, then remove and set aside.
  4. In the same pan, add the minced garlic, grated ginger, diced carrot, and bell pepper. Stir-fry for about 3-4 minutes until the vegetables start to soften.
  5. Add the green peas and cooked rice to the pan. Stir well to combine, breaking up any clumps of rice.
  6. Return the cooked tofu to the pan and add the soy sauce, sesame oil, salt, and black pepper. Stir-fry everything together for another 2-3 minutes until heated through.
  7. Finally, stir in the chopped spring onions and serve hot.
