Ingredients
- Jasmine rice - 150 grams
- Firm tofu - 200 grams
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Green peas - 100 grams (fresh or frozen)
- Spring onions - 2, chopped
- Garlic - 2 cloves, minced
- Soy sauce - 30 ml
- Sesame oil - 15 ml
- Vegetable oil - 15 ml
- Ginger - 1 teaspoon, grated
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook according to package instructions (usually about 15 minutes).
- While the rice is cooking, drain the tofu and press it between paper towels to remove excess moisture, then cut it into small cubes.
- In a large pan or wok, heat the vegetable oil over medium-high heat and add the cubed tofu. Cook until golden brown on all sides, about 5-7 minutes, then remove and set aside.
- In the same pan, add the minced garlic, grated ginger, diced carrot, and bell pepper. Stir-fry for about 3-4 minutes until the vegetables start to soften.
- Add the green peas and cooked rice to the pan. Stir well to combine, breaking up any clumps of rice.
- Return the cooked tofu to the pan and add the soy sauce, sesame oil, salt, and black pepper. Stir-fry everything together for another 2-3 minutes until heated through.
- Finally, stir in the chopped spring onions and serve hot.
