- Zucchini - 1 medium

- Cherry tomatoes - 8 pieces
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Honey or maple syrup - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Skewers - 4 (soaked in water for 30 minutes if wooden)
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into 2 cm cubes.
- In a bowl, mix soy sauce, sesame oil, minced garlic, grated ginger, honey (or maple syrup), and black pepper to create the marinade.
- Add the tofu cubes to the marinade, ensuring they are well coated. Let them marinate for 15 minutes.
- While the tofu is marinating, chop the bell pepper, zucchini, and red onion into bite-sized pieces.
- Preheat a grill or grill pan over medium heat.
- Thread the marinated tofu, bell pepper, zucchini, red onion, and cherry tomatoes onto the skewers, alternating between ingredients.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove from the grill and serve hot, drizzled with additional sesame oil if desired.
