Ingredients

  • Firm tofu - 200 grams
  • Bell pepper (red or yellow) - 1 medium
  • Zucchini - 1 medium
  • Red onion - 1 small
  • Cherry tomatoes - 8 pieces
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Honey or maple syrup - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Skewers - 4 (soaked in water for 30 minutes if wooden)

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into 2 cm cubes.
  2. In a bowl, mix soy sauce, sesame oil, minced garlic, grated ginger, honey (or maple syrup), and black pepper to create the marinade.
  3. Add the tofu cubes to the marinade, ensuring they are well coated. Let them marinate for 15 minutes.
  4. While the tofu is marinating, chop the bell pepper, zucchini, and red onion into bite-sized pieces.
  5. Preheat a grill or grill pan over medium heat.
  6. Thread the marinated tofu, bell pepper, zucchini, red onion, and cherry tomatoes onto the skewers, alternating between ingredients.
  7. Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  8. Remove from the grill and serve hot, drizzled with additional sesame oil if desired.
