- Firm tofu - 200 grams
- Vegetable broth - 500 ml
- Shiitake mushrooms - 100 grams, sliced
- Broccoli - 150 grams, cut into florets
- Carrot - 1 medium, sliced
- Snow peas - 100 grams
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, grated
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Green onions - 2, chopped
- Cornstarch - 1 tablespoon
- Water - 2 tablespoons
- Red chili flakes - 1/2 teaspoon (optional)
Steps
- Press the tofu to remove excess water, then cut it into cubes.
- In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced shiitake mushrooms and carrot to the pot, cooking for 3-4 minutes until they soften.
- Pour in the vegetable broth and bring it to a gentle boil. Stir in the soy sauce and red chili flakes (if using).
- Add the broccoli and snow peas to the pot, cooking for an additional 5 minutes.
- In a small bowl, mix cornstarch with 2 tablespoons of water to create a slurry. Add this to the pot, stirring until the broth thickens slightly.
- Carefully add the cubed tofu to the pot, simmering for another 5 minutes to heat through.
- Garnish with chopped green onions before serving. Enjoy hot!
