Ingredients

  • Firm tofu - 200 grams
  • Vegetable broth - 500 ml
  • Shiitake mushrooms - 100 grams, sliced
  • Broccoli - 150 grams, cut into florets
  • Carrot - 1 medium, sliced
  • Snow peas - 100 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Cornstarch - 1 tablespoon
  • Water - 2 tablespoons
  • Red chili flakes - 1/2 teaspoon (optional)

Steps

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add the sliced shiitake mushrooms and carrot to the pot, cooking for 3-4 minutes until they soften.
  4. Pour in the vegetable broth and bring it to a gentle boil. Stir in the soy sauce and red chili flakes (if using).
  5. Add the broccoli and snow peas to the pot, cooking for an additional 5 minutes.
  6. In a small bowl, mix cornstarch with 2 tablespoons of water to create a slurry. Add this to the pot, stirring until the broth thickens slightly.
  7. Carefully add the cubed tofu to the pot, simmering for another 5 minutes to heat through.
  8. Garnish with chopped green onions before serving. Enjoy hot!
