Ingredients

  • Cooked jasmine rice - 2 cups
  • Firm tofu - 200 grams, cubed
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Green peas - 1/2 cup (fresh or frozen)
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce (gluten-free) - 3 tablespoons
  • Sesame oil - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add cubed tofu and cook until golden brown on all sides, about 8-10 minutes. Remove from skillet and set aside.
  3. In the same skillet, add garlic and ginger, sauté for 1 minute until fragrant.
  4. Add diced carrot and bell pepper, cooking for 4-5 minutes until tender.
  5. Stir in green peas and cooked jasmine rice, mixing well to combine.
  6. Pour in gluten-free soy sauce and sesame oil, stirring to coat the rice evenly.
  7. Add the cooked tofu back to the skillet and mix everything together, cooking for an additional 2-3 minutes.
  8. Season with salt and pepper to taste, then remove from heat.
  9. Garnish with chopped green onion and sesame seeds before serving.
