Vegetable and Tofu Fried Rice

Ingredients
- Cooked Jasmine rice - 2 cups
- Firm tofu - 200 grams, cubed
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Green peas - 1/2 cup
- Green onion - 2 stalks, sliced
- Garlic - 2 cloves, minced
- Soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
- Add the cubed tofu and fry until golden brown on all sides, about 5-7 minutes. Remove from the pan and set aside.
- In the same pan, add the remaining tablespoon of vegetable oil. Add minced garlic and sauté for 30 seconds until fragrant.
- Add diced carrots and bell pepper to the pan. Stir-fry for about 3-4 minutes until they begin to soften.
- Add green peas and stir-fry for another 2 minutes.
- Add the cooked rice to the pan, breaking up any clumps. Mix well with the vegetables.
- Pour in the soy sauce and add sesame oil. Stir well to combine and heat through for about 2-3 minutes.
- Return the fried tofu to the pan, and toss everything together. Season with salt and black pepper to taste.
- Garnish with sliced green onions before serving.
