Ingredients

  • Cooked Jasmine rice - 2 cups
  • Firm tofu - 200 grams, cubed
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Green peas - 1/2 cup
  • Green onion - 2 stalks, sliced
  • Garlic - 2 cloves, minced
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
  2. Add the cubed tofu and fry until golden brown on all sides, about 5-7 minutes. Remove from the pan and set aside.
  3. In the same pan, add the remaining tablespoon of vegetable oil. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Add diced carrots and bell pepper to the pan. Stir-fry for about 3-4 minutes until they begin to soften.
  5. Add green peas and stir-fry for another 2 minutes.
  6. Add the cooked rice to the pan, breaking up any clumps. Mix well with the vegetables.
  7. Pour in the soy sauce and add sesame oil. Stir well to combine and heat through for about 2-3 minutes.
  8. Return the fried tofu to the pan, and toss everything together. Season with salt and black pepper to taste.
  9. Garnish with sliced green onions before serving.
