Ingredients

  • Firm tofu - 200 grams
  • Carrot - 1 medium, sliced
  • Bell pepper (red or yellow) - 1 medium, diced
  • Broccoli florets - 100 grams
  • Snow peas - 100 grams
  • Coconut milk - 200 ml
  • Vegetable broth - 100 ml
  • Soy sauce - 2 tablespoons
  • Curry powder - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Vegetable oil - 2 tablespoons
  • Cornstarch - 1 teaspoon (optional, for thickening)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into cubes.
  2. Heat vegetable oil in a large pan or wok over medium heat. Add the tofu cubes and sauté until golden brown on all sides. Remove tofu from the pan and set aside.
  3. In the same pan, add minced garlic and grated ginger. Sauté for 1 minute until fragrant.
  4. Add the sliced carrot, diced bell pepper, broccoli florets, and snow peas to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
  5. Stir in the curry powder and cook for another minute to release the flavors.
  6. Pour in the coconut milk and vegetable broth, then add soy sauce. Stir to combine and bring to a gentle simmer.
  7. Return the tofu to the pan, and let it simmer for another 5-10 minutes. If a thicker consistency is desired, mix cornstarch with a little water and add it to the curry, stirring well.
  8. Season with salt and black pepper to taste. Serve hot, garnished with fresh cilantro.
