- Carrot - 1 medium, sliced

- Broccoli florets - 100 grams
- Snow peas - 100 grams
- Coconut milk - 200 ml
- Vegetable broth - 100 ml
- Soy sauce - 2 tablespoons
- Curry powder - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Vegetable oil - 2 tablespoons
- Cornstarch - 1 teaspoon (optional, for thickening)

Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into cubes.
- Heat vegetable oil in a large pan or wok over medium heat. Add the tofu cubes and sauté until golden brown on all sides. Remove tofu from the pan and set aside.
- In the same pan, add minced garlic and grated ginger. Sauté for 1 minute until fragrant.

- Return the tofu to the pan, and let it simmer for another 5-10 minutes. If a thicker consistency is desired, mix cornstarch with a little water and add it to the curry, stirring well.
