Ingredients

  • Chow Mein noodles - 100 grams
  • Firm tofu - 200 grams, diced
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, thinly sliced
  • Broccoli florets - 100 grams
  • Snow peas - 50 grams
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the Chow Mein noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the diced tofu and sauté until golden brown on all sides, about 5-7 minutes. Remove and set aside.
  4. In the same skillet, add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  5. Add the carrots, bell pepper, broccoli, and snow peas to the skillet and stir-fry for about 5 minutes until the vegetables are tender-crisp.
  6. Return the tofu to the skillet and add the cooked Chow Mein noodles, soy sauce, sesame oil, salt, and black pepper. Toss everything together to combine and heat through for another 2-3 minutes.
  7. Garnish with chopped green onions before serving.
