- Wide rice noodles - 150 grams
- Firm tofu - 200 grams, cubed
- Soy sauce (kosher) - 2 tablespoons
- Oyster sauce (kosher) - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Snow peas - 100 grams
- Green onions - 2, chopped
- Sesame oil - 1 teaspoon
- Cornstarch - 1 teaspoon (optional, for thickening sauce)
Steps
- Soak the wide rice noodles in warm water for about 20 minutes until softened, then drain and set aside.
- In a large non-stick skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the cubed tofu and fry until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add the sliced bell pepper, julienned carrot, and snow peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Add the soaked noodles to the skillet along with the fried tofu, soy sauce, oyster sauce, and sesame oil. If using, mix the cornstarch with a little water to create a slurry and add it to the pan. Toss everything together for about 2-3 minutes until well combined and heated through.
- Garnish with chopped green onions and serve immediately.
