Ingredients

  • Firm tofu - 400 grams
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Bell pepper - 1 medium, cut into chunks
  • Red onion - 1 medium, cut into chunks
  • Zucchini - 1 medium, sliced
  • Cherry tomatoes - 150 grams
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. Press the tofu to remove excess water for about 15 minutes, then cut it into 2.5 cm cubes.
  2. In a bowl, mix the soy sauce, sesame oil, rice vinegar, brown sugar, minced garlic, and grated ginger to create the marinade.
  3. Add the tofu cubes to the marinade and let them soak for at least 15 minutes, turning occasionally to ensure even coating.
  4. Preheat a grill or grill pan over medium-high heat.
  5. While the grill is heating, prepare the vegetables by cutting them into chunks.
  6. Once the tofu is marinated, thread the tofu and vegetables onto the skewers, alternating between tofu and veggies.
  7. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the tofu is golden and the vegetables are slightly charred.
  8. Remove from the grill and serve immediately with extra soy sauce or a dipping sauce of your choice.
