Ingredients

  • All-purpose flour - 200 grams
  • Active dry yeast - 5 grams
  • Warm water - 120 ml
  • Sugar - 10 grams
  • Salt - 2 grams
  • Firm tofu - 150 grams
  • Soy sauce - 15 ml
  • Sesame oil - 5 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Cabbage - 100 grams, finely chopped
  • Carrot - 1 small, grated
  • Black pepper - 1/4 teaspoon
  • Cornstarch - 1 tablespoon
  • Oil - for frying

Steps

  1. In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and pour in the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a lightly oiled bowl, cover, and let it rise in a warm place for 30 minutes.
  4. While the dough is rising, prepare the tofu filling. Press the firm tofu to remove excess moisture, then crumble it into a bowl.
  5. Add soy sauce, sesame oil, minced garlic, grated ginger, chopped green onions, finely chopped cabbage, grated carrot, black pepper, and cornstarch to the crumbled tofu. Mix well to combine.
  6. Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a small circle, about 10 cm in diameter.
  7. Place a tablespoon of the tofu filling in the center of each dough circle. Fold the edges over the filling and pinch to seal.
  8. Place the filled buns on parchment paper and let them rest for another 10 minutes.
  9. In a steamer, bring water to a boil. Place the buns in the steamer basket, cover, and steam for 15 minutes until fluffy.
  10. While the buns are steaming, heat a little oil in a pan over medium heat. Optionally, fry the buns for 2-3 minutes on each side for a crispy exterior.
  11. Serve the vegan tofu buns warm, garnished with extra green onions if desired.
