Ingredients
- All-purpose flour - 200 grams
- Active dry yeast - 5 grams
- Warm water - 120 ml
- Sugar - 10 grams
- Salt - 2 grams
- Firm tofu - 150 grams
- Soy sauce - 15 ml
- Sesame oil - 5 ml
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Cabbage - 100 grams, finely chopped
- Carrot - 1 small, grated
- Black pepper - 1/4 teaspoon
- Cornstarch - 1 tablespoon
- Oil - for frying
Steps
- In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for 5-10 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and pour in the yeast mixture. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a lightly oiled bowl, cover, and let it rise in a warm place for 30 minutes.
- While the dough is rising, prepare the tofu filling. Press the firm tofu to remove excess moisture, then crumble it into a bowl.
- Add soy sauce, sesame oil, minced garlic, grated ginger, chopped green onions, finely chopped cabbage, grated carrot, black pepper, and cornstarch to the crumbled tofu. Mix well to combine.
- Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a small circle, about 10 cm in diameter.
- Place a tablespoon of the tofu filling in the center of each dough circle. Fold the edges over the filling and pinch to seal.
- Place the filled buns on parchment paper and let them rest for another 10 minutes.
- In a steamer, bring water to a boil. Place the buns in the steamer basket, cover, and steam for 15 minutes until fluffy.
- While the buns are steaming, heat a little oil in a pan over medium heat. Optionally, fry the buns for 2-3 minutes on each side for a crispy exterior.
- Serve the vegan tofu buns warm, garnished with extra green onions if desired.
