Ingredients
- Whole wheat flour - 1 cup
- Active dry yeast - 1 teaspoon
- Warm water - 120 ml
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Sweet potato - 200 grams, cooked and mashed
- Green onions - 2, finely chopped
- Red bell pepper - 1/2, diced
- Mushrooms - 100 grams, sliced
- Soy sauce - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Sesame oil - 1 teaspoon
- Fresh cilantro - a handful, chopped
- Black sesame seeds - 1 tablespoon
Steps
- In a small bowl, dissolve the active dry yeast in warm water and let it sit for 5 minutes until frothy.
- In a mixing bowl, combine the whole wheat flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover with a cloth, and let it rise for 30 minutes in a warm place.
- While the dough is rising, prepare the topping by heating sesame oil in a pan over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
- Add the diced red bell pepper and sliced mushrooms to the pan, cooking for about 5 minutes until tender. Stir in the mashed sweet potato, soy sauce, and half of the chopped green onions. Cook for another 2-3 minutes, then remove from heat.
- Preheat your oven to 220°C (425°F).
- Once the dough has risen, roll it out on a floured surface into a round shape about 1/2 inch thick.
