Ingredients

  • Whole wheat flour - 1 cup
  • Active dry yeast - 1 teaspoon
  • Warm water - 120 ml
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Sweet potato - 200 grams, cooked and mashed
  • Green onions - 2, finely chopped
  • Red bell pepper - 1/2, diced
  • Mushrooms - 100 grams, sliced
  • Soy sauce - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 teaspoon
  • Fresh cilantro - a handful, chopped
  • Black sesame seeds - 1 tablespoon

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for 5 minutes until frothy.
  2. In a mixing bowl, combine the whole wheat flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover with a cloth, and let it rise for 30 minutes in a warm place.
  4. While the dough is rising, prepare the topping by heating sesame oil in a pan over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
  5. Add the diced red bell pepper and sliced mushrooms to the pan, cooking for about 5 minutes until tender. Stir in the mashed sweet potato, soy sauce, and half of the chopped green onions. Cook for another 2-3 minutes, then remove from heat.
  6. Preheat your oven to 220°C (425°F).
  7. Once the dough has risen, roll it out on a floured surface into a round shape about 1/2 inch thick.
  8. Transfer the rolled dough onto a baking sheet lined with parchment paper. Spread the sweet potato mixture evenly over the crust.
