- Sweet potato - 200 grams
- All-purpose flour - 150 grams
- Warm water - 60 ml
- Active dry yeast - 5 grams
- Sugar - 10 grams
- Salt - 3 grams
- Vegetable oil - 1 tablespoon
- Mushrooms (finely chopped) - 100 grams
- Carrot (grated) - 50 grams
- Bell pepper (finely chopped) - 50 grams
- Green onions (chopped) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
Steps
- Peel and steam the sweet potato until tender, about 15-20 minutes. Allow to cool slightly, then mash until smooth.
- In a bowl, combine warm water, sugar, and yeast. Let sit for about 5 minutes until foamy.
- In a large mixing bowl, combine the mashed sweet potato, flour, salt, and the yeast mixture. Knead until a smooth dough forms, about 5-7 minutes.
- Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes.
- While the dough is rising, prepare the filling by heating vegetable oil in a pan over medium heat. Add mushrooms, carrot, bell pepper, and green onions, and sauté for about 5-7 minutes until tender.
- Stir in soy sauce and sesame oil. Remove from heat and let cool.
- Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a circle about 10 cm in diameter.
- Place a spoonful of the filling in the center of each circle, fold the dough over, and pinch to seal tightly.
- Place the buns on a parchment-lined steamer basket, cover, and let them rise for another 15 minutes.
- Steam the buns over boiling water for 15 minutes until fluffy and cooked through.
- Serve warm, drizzled with additional soy sauce if desired.
