Ingredients

  • Sweet potato - 200 grams
  • All-purpose flour - 150 grams
  • Warm water - 60 ml
  • Active dry yeast - 5 grams
  • Sugar - 10 grams
  • Salt - 3 grams
  • Vegetable oil - 1 tablespoon
  • Mushrooms (finely chopped) - 100 grams
  • Carrot (grated) - 50 grams
  • Bell pepper (finely chopped) - 50 grams
  • Green onions (chopped) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon

Steps

  1. Peel and steam the sweet potato until tender, about 15-20 minutes. Allow to cool slightly, then mash until smooth.
  2. In a bowl, combine warm water, sugar, and yeast. Let sit for about 5 minutes until foamy.
  3. In a large mixing bowl, combine the mashed sweet potato, flour, salt, and the yeast mixture. Knead until a smooth dough forms, about 5-7 minutes.
  4. Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes.
  5. While the dough is rising, prepare the filling by heating vegetable oil in a pan over medium heat. Add mushrooms, carrot, bell pepper, and green onions, and sauté for about 5-7 minutes until tender.
  6. Stir in soy sauce and sesame oil. Remove from heat and let cool.
  7. Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a circle about 10 cm in diameter.
  8. Place a spoonful of the filling in the center of each circle, fold the dough over, and pinch to seal tightly.
  9. Place the buns on a parchment-lined steamer basket, cover, and let them rise for another 15 minutes.
  10. Steam the buns over boiling water for 15 minutes until fluffy and cooked through.
  11. Serve warm, drizzled with additional soy sauce if desired.
