Ingredients

  • Firm tofu - 300 grams
  • Cornstarch - 2 tablespoons
  • Vegetable oil - 3 tablespoons
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Pineapple chunks - 150 grams, canned or fresh
  • Green onion - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 2 tablespoons
  • Maple syrup - 2 tablespoons
  • Ketchup - 2 tablespoons
  • Water - 100 milliliters
  • Sesame seeds - 1 teaspoon, for garnish

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
  2. In a bowl, toss the tofu cubes with cornstarch until evenly coated.
  3. Heat 2 tablespoons of vegetable oil in a non-stick pan over medium-high heat. Add the tofu and cook until golden and crispy on all sides, about 5-7 minutes. Remove and set aside.
  4. In the same pan, add the remaining tablespoon of oil, then sauté the garlic and ginger for about 30 seconds until fragrant.
  5. Add the diced red and green bell peppers, cooking for 3-4 minutes until slightly softened.
  6. Stir in the pineapple chunks and cooked tofu back into the pan.
  7. In a bowl, mix the soy sauce, rice vinegar, maple syrup, ketchup, and water. Pour this sauce over the tofu and vegetables.
  8. Cook for an additional 5 minutes, stirring occasionally until the sauce thickens slightly.
  9. Serve hot, garnished with chopped green onions and sesame seeds.
