- Cornstarch - 2 tablespoons

- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Pineapple chunks - 150 grams, canned or fresh
- Green onion - 2, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Rice vinegar - 2 tablespoons
- Maple syrup - 2 tablespoons
- Ketchup - 2 tablespoons
- Water - 100 milliliters
- Sesame seeds - 1 teaspoon, for garnish
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
- In a bowl, toss the tofu cubes with cornstarch until evenly coated.
- Heat 2 tablespoons of vegetable oil in a non-stick pan over medium-high heat. Add the tofu and cook until golden and crispy on all sides, about 5-7 minutes. Remove and set aside.
- In the same pan, add the remaining tablespoon of oil, then sauté the garlic and ginger for about 30 seconds until fragrant.
- Add the diced red and green bell peppers, cooking for 3-4 minutes until slightly softened.
- Stir in the pineapple chunks and cooked tofu back into the pan.
- In a bowl, mix the soy sauce, rice vinegar, maple syrup, ketchup, and water. Pour this sauce over the tofu and vegetables.
- Cook for an additional 5 minutes, stirring occasionally until the sauce thickens slightly.
- Serve hot, garnished with chopped green onions and sesame seeds.
