Ingredients

  • Glutinous rice - 200 grams
  • Water - 300 ml
  • Mushrooms (shiitake or button) - 100 grams, finely chopped
  • Carrot - 1 medium, finely diced
  • Green onions - 2 stalks, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Cornstarch - 1 tablespoon (for dusting)
  • Olive oil - 1 tablespoon (for brushing)

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. In a skillet, heat sesame oil over medium heat, then add garlic and ginger, sautéing until fragrant.
  3. Add the chopped mushrooms and carrot to the skillet, cooking until softened. Stir in soy sauce, green onions, salt, and pepper. Remove from heat and let cool.
  4. Preheat your oven to 180°C (350°F).
  5. Drain the soaked rice and spread it out on a clean surface. Use a rolling pin to flatten the rice into a thin layer, approximately 0.5 cm thick.
  6. Cut the flattened rice into squares (about 10 cm x 10 cm). Place a spoonful of the mushroom and carrot filling in the center of each square.
  7. Fold the corners of the rice squares over the filling to create a dumpling shape. Pinch the edges to seal them tightly.
  8. Dust the bottom of a baking dish with cornstarch and place the dumplings seam-side down in the dish. Brush the tops with olive oil.
  9. Bake in the preheated oven for 30-35 minutes or until the dumplings are golden brown and crispy on top.
  10. Remove from the oven and let cool for a few minutes before serving warm.
