Ingredients
- Glutinous rice - 200 grams
- Water - 300 ml
- Mushrooms (shiitake or button) - 100 grams, finely chopped
- Carrot - 1 medium, finely diced
- Green onions - 2 stalks, chopped
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Cornstarch - 1 tablespoon (for dusting)
- Olive oil - 1 tablespoon (for brushing)
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- In a skillet, heat sesame oil over medium heat, then add garlic and ginger, sautéing until fragrant.
- Add the chopped mushrooms and carrot to the skillet, cooking until softened. Stir in soy sauce, green onions, salt, and pepper. Remove from heat and let cool.
- Preheat your oven to 180°C (350°F).
- Drain the soaked rice and spread it out on a clean surface. Use a rolling pin to flatten the rice into a thin layer, approximately 0.5 cm thick.
- Cut the flattened rice into squares (about 10 cm x 10 cm). Place a spoonful of the mushroom and carrot filling in the center of each square.
- Fold the corners of the rice squares over the filling to create a dumpling shape. Pinch the edges to seal them tightly.
- Dust the bottom of a baking dish with cornstarch and place the dumplings seam-side down in the dish. Brush the tops with olive oil.
- Bake in the preheated oven for 30-35 minutes or until the dumplings are golden brown and crispy on top.
- Remove from the oven and let cool for a few minutes before serving warm.
