Ingredients

  • Glutinous rice - 200 grams
  • Water - 500 ml
  • Mushrooms (shiitake or button) - 100 grams, diced
  • Carrot - 1 medium, diced
  • Green peas - 50 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onion - 2 stalks, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and place it in a steamer lined with cheesecloth. Steam for 30 minutes until the rice is translucent and sticky.
  3. While the rice is steaming, heat sesame oil in a pan over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant.
  4. Add the diced mushrooms, carrot, and green peas to the pan, cooking for about 5-7 minutes until the vegetables are tender.
  5. Stir in the soy sauce, salt, and black pepper, mixing well to combine. Remove from heat and set aside.
  6. Once the rice is done steaming, transfer it to a large bowl and gently fold in the sautéed vegetable mixture and chopped green onions until evenly combined.
  7. Preheat the oven to 180°C (350°F). Transfer the rice mixture into a greased baking dish, spreading it evenly.
  8. Bake in the preheated oven for 15-20 minutes until the top is slightly crispy.
  9. Remove from the oven and let it cool for a few minutes before garnishing with fresh cilantro. Serve warm.
