- Glutinous rice - 200 grams
- Water - 500 ml
- Mushrooms (shiitake or button) - 100 grams, diced
- Carrot - 1 medium, diced
- Green peas - 50 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onion - 2 stalks, chopped
- Salt - to taste
- Black pepper - to taste
- Cilantro - for garnish
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the soaked rice and place it in a steamer lined with cheesecloth. Steam for 30 minutes until the rice is translucent and sticky.
- While the rice is steaming, heat sesame oil in a pan over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant.
- Add the diced mushrooms, carrot, and green peas to the pan, cooking for about 5-7 minutes until the vegetables are tender.
- Stir in the soy sauce, salt, and black pepper, mixing well to combine. Remove from heat and set aside.
- Once the rice is done steaming, transfer it to a large bowl and gently fold in the sautéed vegetable mixture and chopped green onions until evenly combined.
- Preheat the oven to 180°C (350°F). Transfer the rice mixture into a greased baking dish, spreading it evenly.
- Bake in the preheated oven for 15-20 minutes until the top is slightly crispy.
- Remove from the oven and let it cool for a few minutes before garnishing with fresh cilantro. Serve warm.
