- Firm tofu - 300 grams
- Soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Sriracha - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, grated
- Maple syrup - 1 tablespoon
- Cornstarch - 2 tablespoons
- Bell pepper - 1 medium, cut into 1-inch pieces
- Red onion - 1 small, cut into wedges
- Zucchini - 1 small, sliced into rounds
- Wooden skewers - 4 (soaked in water for 30 minutes)
Steps
- Press the tofu between paper towels to remove excess moisture for about 15 minutes.
- While the tofu is pressing, prepare the marinade by mixing soy sauce, sesame oil, Sriracha, minced garlic, grated ginger, and maple syrup in a bowl.
- Cut the pressed tofu into 1-inch cubes and add them to the marinade. Let marinate for at least 10 minutes.
- Preheat your grill or grill pan over medium heat.
- Toss the bell pepper, red onion, and zucchini in a bowl with the remaining marinade and set aside.
- Once the tofu has marinated, dust the cubes with cornstarch to create a crispy texture when grilled.
- Thread the marinated tofu, bell pepper, red onion, and zucchini alternately onto the soaked skewers.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and the tofu is golden brown.
- Remove from heat and serve hot with a side of rice or quinoa.
