Ingredients

  • Firm tofu - 300 grams
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Sriracha - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Maple syrup - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Bell pepper - 1 medium, cut into 1-inch pieces
  • Red onion - 1 small, cut into wedges
  • Zucchini - 1 small, sliced into rounds
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. Press the tofu between paper towels to remove excess moisture for about 15 minutes.
  2. While the tofu is pressing, prepare the marinade by mixing soy sauce, sesame oil, Sriracha, minced garlic, grated ginger, and maple syrup in a bowl.
  3. Cut the pressed tofu into 1-inch cubes and add them to the marinade. Let marinate for at least 10 minutes.
  4. Preheat your grill or grill pan over medium heat.
  5. Toss the bell pepper, red onion, and zucchini in a bowl with the remaining marinade and set aside.
  6. Once the tofu has marinated, dust the cubes with cornstarch to create a crispy texture when grilled.
  7. Thread the marinated tofu, bell pepper, red onion, and zucchini alternately onto the soaked skewers.
  8. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and the tofu is golden brown.
  9. Remove from heat and serve hot with a side of rice or quinoa.
