- Green onions, sliced - 2 stalks
- Carrot, diced - 1 small
- Red bell pepper, diced - 1/2
- Frozen peas - 1/2 cup (75g)
- Vegan shrimp (or other seafood alternative) - 100g
- Seaweed flakes (nori or dulse) - 1 tablespoon
- Lemon juice - 1 tablespoon (15ml)
- Black pepper - to taste
Steps
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add minced garlic and ginger to the skillet, sautéing for about 30 seconds until fragrant.
- Stir in the diced carrot and red bell pepper, cooking for 3-4 minutes until tender.

- Pour the soy sauce and lemon juice over the rice, mixing everything together.
