- Sesame oil - 2 tablespoons
- Scallions - 4, finely chopped
- Salt - 1/2 teaspoon
- Tomato sauce - 100 grams
- Dairy-free cheese - 100 grams, shredded
- Bell pepper - 1/2, thinly sliced
- Mushrooms - 100 grams, sliced
- Olive oil - 1 tablespoon
- Black pepper - to taste
- Fresh basil - a handful, for garnish
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Gradually add boiling water while stirring until a shaggy dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
- Divide the dough into two equal portions. Roll each portion into a thin circle about 20 cm in diameter.
- Brush each circle with sesame oil and sprinkle with chopped scallions. Roll the dough tightly into a log, then coil it into a round shape. Flatten gently with your hands.
- Heat a non-stick skillet over medium heat and add a little oil. Cook each pancake for 3-4 minutes on each side until golden brown and crispy. Remove and set aside.
- In the same skillet, add a bit more olive oil and layer the tomato sauce on top of one scallion pancake. Sprinkle with dairy-free cheese, bell pepper, and mushrooms. Season with black pepper.
- Place the second scallion pancake on top to create a pizza sandwich. Cook for 5-7 minutes on low heat, pressing down gently, until the cheese melts.
- Carefully flip the pizza to cook the other side for an additional 3-4 minutes. Once both sides are golden and crispy, remove from the skillet.
