Ingredients

  • All-purpose flour - 120 grams
  • Golden syrup - 60 grams
  • Vegetable oil - 30 grams
  • Water - 30 grams
  • Baking soda - 1/4 teaspoon
  • Red bean paste - 100 grams
  • Sesame seeds - 1 tablespoon
  • Salt - a pinch

Steps

  1. In a mixing bowl, combine the all-purpose flour, baking soda, and salt. Mix well.
  2. In another bowl, whisk together the golden syrup, vegetable oil, and water until smooth.
  3. Gradually pour the wet ingredients into the flour mixture, stirring with a spatula until a soft dough forms.
  4. Knead the dough gently on a floured surface for about 5 minutes until it becomes smooth.
  5. Cover the dough with a damp cloth and let it rest for 30 minutes.
  6. Divide the rested dough into 4 equal pieces and shape each piece into a ball.
  7. Flatten each ball into a disc and place about 25 grams of red bean paste in the center.
  8. Wrap the dough around the filling, pinching it closed, and shape it into a ball again.
  9. Lightly dust a mooncake mold with flour, then press the filled dough ball into the mold to shape it, and gently remove it.
  10. Preheat the oven to 180°C (350°F) and place the shaped mooncakes on a baking sheet lined with parchment paper.
  11. Bake for 20 minutes, then remove from the oven and let cool for 5 minutes.
  12. Brush the tops lightly with water and sprinkle sesame seeds on top, then return to the oven for an additional 10 minutes.
  13. Allow the mooncakes to cool completely before serving.
