Ingredients
- All-purpose flour - 120 grams
- Golden syrup - 60 grams
- Vegetable oil - 30 grams
- Water - 30 grams
- Baking soda - 1/4 teaspoon
- Red bean paste - 100 grams
- Sesame seeds - 1 tablespoon
- Salt - a pinch
Steps
- In a mixing bowl, combine the all-purpose flour, baking soda, and salt. Mix well.
- In another bowl, whisk together the golden syrup, vegetable oil, and water until smooth.
- Gradually pour the wet ingredients into the flour mixture, stirring with a spatula until a soft dough forms.
- Knead the dough gently on a floured surface for about 5 minutes until it becomes smooth.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- Divide the rested dough into 4 equal pieces and shape each piece into a ball.
- Flatten each ball into a disc and place about 25 grams of red bean paste in the center.
- Wrap the dough around the filling, pinching it closed, and shape it into a ball again.
- Lightly dust a mooncake mold with flour, then press the filled dough ball into the mold to shape it, and gently remove it.
- Preheat the oven to 180°C (350°F) and place the shaped mooncakes on a baking sheet lined with parchment paper.
- Bake for 20 minutes, then remove from the oven and let cool for 5 minutes.
- Brush the tops lightly with water and sprinkle sesame seeds on top, then return to the oven for an additional 10 minutes.
- Allow the mooncakes to cool completely before serving.
