- Eggplant - 200 grams, diced
- Firm tofu - 100 grams, crumbled
- Soy sauce - 2 tablespoons
- Doubanjiang (fermented chili bean paste) - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Scallions - 2, chopped
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Cornstarch - 1 teaspoon
- Chili oil - 1 teaspoon (optional)
- Vegan mozzarella cheese - 100 grams (optional)
- Fresh cilantro - for garnish
Steps
- Preheat your oven to 220°C (425°F).
- In a skillet, heat the olive oil over medium heat. Add the diced eggplant and sauté for about 5 minutes until softened.
- Add the minced garlic and grated ginger to the skillet, stirring for an additional 1-2 minutes until fragrant.
- Stir in the crumbled tofu, soy sauce, doubanjiang, and sesame oil, and cook for another 3-4 minutes, allowing the flavors to meld. If desired, add cornstarch mixed with a little water to thicken the mixture.
- Remove the skillet from heat and stir in the chopped scallions.
- Roll out the pizza dough on a floured surface to your desired thickness and shape, then place it on a pizza stone or baking sheet.
- Spread the eggplant and tofu mixture evenly over the pizza base. If using, sprinkle the vegan mozzarella cheese on top.
- Bake in the preheated oven for 12-15 minutes until the crust is golden brown and crispy.
- Drizzle with chili oil if desired, remove from the oven, and let cool for a couple of minutes.
- Garnish with fresh cilantro before slicing and serving.
