  • Doubanjiang (fermented chili bean paste) - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Scallions - 2, chopped
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Chili oil - 1 teaspoon (optional)
  • Vegan mozzarella cheese - 100 grams (optional)
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 220°C (425°F).
  2. In a skillet, heat the olive oil over medium heat. Add the diced eggplant and sauté for about 5 minutes until softened.
  3. Add the minced garlic and grated ginger to the skillet, stirring for an additional 1-2 minutes until fragrant.
  4. Stir in the crumbled tofu, soy sauce, doubanjiang, and sesame oil, and cook for another 3-4 minutes, allowing the flavors to meld. If desired, add cornstarch mixed with a little water to thicken the mixture.
  5. Remove the skillet from heat and stir in the chopped scallions.
  6. Roll out the pizza dough on a floured surface to your desired thickness and shape, then place it on a pizza stone or baking sheet.
  7. Spread the eggplant and tofu mixture evenly over the pizza base. If using, sprinkle the vegan mozzarella cheese on top.
  8. Bake in the preheated oven for 12-15 minutes until the crust is golden brown and crispy.
  9. Drizzle with chili oil if desired, remove from the oven, and let cool for a couple of minutes.
  10. Garnish with fresh cilantro before slicing and serving.
