Ingredients

  • King oyster mushrooms - 200 grams
  • Nori seaweed sheets - 2 sheets
  • Vegan mayonnaise - 4 tablespoons
  • Lemon juice - 1 tablespoon
  • Old Bay seasoning - 1 teaspoon
  • Celery - 1 stalk, finely chopped
  • Red onion - 2 tablespoons, finely diced
  • Fresh dill - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lettuce leaves - 4 large
  • Vegan hot dog buns - 2 pieces

Steps

  1. Preheat your oven to 200°C (392°F).
  2. Clean and slice the king oyster mushrooms into thick strips to resemble lobster meat.
  3. Place the sliced mushrooms on a baking sheet lined with parchment paper and lightly drizzle with olive oil, salt, and pepper. Bake for 15-20 minutes until they are golden and tender.
  4. While the mushrooms are baking, prepare the vegan lobster salad by finely chopping the nori sheets and combining them in a bowl with the vegan mayonnaise, lemon juice, Old Bay seasoning, celery, red onion, dill, salt, and pepper.
  5. Once the mushrooms are done baking, allow them to cool slightly, then chop them into bite-sized pieces and add them to the salad mixture. Stir well to combine.
  6. To assemble, take the hot dog buns and place a leaf of lettuce inside each. Spoon the vegan lobster salad generously into the buns.
