- King oyster mushrooms - 200 grams
- Nori seaweed sheets - 2 sheets
- Vegan mayonnaise - 4 tablespoons
- Lemon juice - 1 tablespoon
- Old Bay seasoning - 1 teaspoon
- Celery - 1 stalk, finely chopped
- Red onion - 2 tablespoons, finely diced
- Fresh dill - 1 tablespoon, chopped
- Salt - to taste
- Black pepper - to taste
- Lettuce leaves - 4 large
- Vegan hot dog buns - 2 pieces
Steps
- Preheat your oven to 200°C (392°F).
- Clean and slice the king oyster mushrooms into thick strips to resemble lobster meat.
- Place the sliced mushrooms on a baking sheet lined with parchment paper and lightly drizzle with olive oil, salt, and pepper. Bake for 15-20 minutes until they are golden and tender.
- While the mushrooms are baking, prepare the vegan lobster salad by finely chopping the nori sheets and combining them in a bowl with the vegan mayonnaise, lemon juice, Old Bay seasoning, celery, red onion, dill, salt, and pepper.
- Once the mushrooms are done baking, allow them to cool slightly, then chop them into bite-sized pieces and add them to the salad mixture. Stir well to combine.
- To assemble, take the hot dog buns and place a leaf of lettuce inside each. Spoon the vegan lobster salad generously into the buns.
