  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Old Bay seasoning - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegan mayonnaise - 4 tablespoons
  • Celery - 2 tablespoons, finely chopped
  • Green onions - 2 tablespoons, finely chopped
  • Hot dog buns - 2 pieces
  • Fresh parsley - 1 tablespoon, chopped for garnish

Steps

  1. Preheat a skillet over medium heat.
  2. Slice the king oyster mushrooms into thin strips resembling lobster meat.
  3. In a bowl, combine olive oil, lemon juice, garlic powder, Old Bay seasoning, salt, and black pepper. Mix well.
  4. Add the sliced mushrooms to the bowl and toss until they are fully coated with the marinade. Let them sit for 10 minutes.
  5. Place the marinated mushrooms in the heated skillet and sauté for 8-10 minutes, stirring occasionally, until they are golden brown and tender.
  6. While the mushrooms are cooking, prepare the vegan lobster salad by mixing vegan mayonnaise, chopped celery, and green onions in a separate bowl.
  7. Once the mushrooms are cooked, add them to the bowl with the vegan lobster salad and mix well.
  8. Toast the hot dog buns in the skillet for 1-2 minutes until golden brown.
  9. Spoon the vegan lobster mixture into the toasted buns, garnish with fresh parsley, and serve immediately.
