- Soy curls - 150 grams
- Cornstarch - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Red bell pepper - 1, diced
- Zucchini - 1, diced
- Carrot - 1, sliced
- Green onions - 2, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Roasted peanuts - 50 grams
- Dried red chilies - 4, whole
- Soy sauce - 3 tablespoons
- Hoisin sauce - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Maple syrup - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
Steps
- Soak the soy curls in warm water for 10 minutes until rehydrated, then drain and squeeze out excess water.
- Toss the rehydrated soy curls in cornstarch until well-coated.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the soy curls and stir-fry until golden brown, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of oil. Add the dried red chilies, garlic, and ginger, and stir-fry for about 30 seconds until fragrant.
- Add the diced red bell pepper, zucchini, and carrot to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
- Return the soy curls to the skillet, and add the soy sauce, hoisin sauce, rice vinegar, maple syrup, and sesame oil. Stir well to combine and cook for another 2-3 minutes.
- Finally, stir in the roasted peanuts and green onions. Adjust seasoning with salt if needed, and cook for an additional minute.
- Serve immediately over steamed rice or quinoa.
