Ingredients

  • Soy curls - 150 grams
  • Cornstarch - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Zucchini - 1, diced
  • Carrot - 1, sliced
  • Green onions - 2, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Roasted peanuts - 50 grams
  • Dried red chilies - 4, whole
  • Soy sauce - 3 tablespoons
  • Hoisin sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Maple syrup - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste

Steps

  1. Soak the soy curls in warm water for 10 minutes until rehydrated, then drain and squeeze out excess water.
  2. Toss the rehydrated soy curls in cornstarch until well-coated.
  3. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the soy curls and stir-fry until golden brown, about 5-7 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of oil. Add the dried red chilies, garlic, and ginger, and stir-fry for about 30 seconds until fragrant.
  5. Add the diced red bell pepper, zucchini, and carrot to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
  6. Return the soy curls to the skillet, and add the soy sauce, hoisin sauce, rice vinegar, maple syrup, and sesame oil. Stir well to combine and cook for another 2-3 minutes.
  7. Finally, stir in the roasted peanuts and green onions. Adjust seasoning with salt if needed, and cook for an additional minute.
  8. Serve immediately over steamed rice or quinoa.
