Ingredients

  • Pizza dough - 200 grams
  • Firm tofu - 100 grams, crumbled
  • Green onions - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cabbage - 100 grams, shredded
  • Carrot - 1 small, grated
  • Mushrooms - 100 grams, sliced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Chili paste - 1 teaspoon (optional)
  • Vegan cheese - 100 grams, shredded
  • Fresh cilantro - for garnish
  • Olive oil - for drizzling

Steps

  1. Preheat your oven to 220 degrees Celsius (428 degrees Fahrenheit).
  2. In a large skillet, heat sesame oil over medium heat and add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  3. Add the crumbled tofu, shredded cabbage, grated carrot, and sliced mushrooms to the skillet. Stir in the soy sauce and chili paste (if using), cooking for about 5-7 minutes until the vegetables are tender.
  4. Roll out the pizza dough on a floured surface into a round shape, about 1 cm thick.
  5. Transfer the rolled-out dough to a baking sheet lined with parchment paper.
  6. Spread the tofu and vegetable mixture evenly over the pizza base, leaving a small border around the edges.
  7. Sprinkle the vegan cheese on top of the vegetable mixture.
  8. Drizzle a little olive oil over the top for extra flavor.
  9. Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is melted.
  10. Once baked, remove from the oven and garnish with fresh cilantro before slicing and serving.
