- Vegetable broth - 500 ml
- Soy sauce - 2 tablespoons
- Rice vinegar - 2 tablespoons
- Chili paste - 1 tablespoon
- Cornstarch - 1 teaspoon
- Tofu (firm) - 100 grams, cubed
- Mushrooms (shiitake or enoki) - 100 grams, sliced
- Bell pepper (red or yellow) - 1 medium, sliced
- Carrot - 1 medium, julienned
- Green onions - 2, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Sesame oil - 1 tablespoon
- Cilantro - for garnish
- Salt - to taste
Steps
- Cook the rice noodles according to package instructions, drain and set aside.
- In a small bowl, mix the soy sauce, rice vinegar, chili paste, and cornstarch with 2 tablespoons of water to make the sauce.
- In a large pan or wok, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sauté for about 1 minute until fragrant.
- Add the cubed tofu and cook for about 5 minutes until golden brown on all sides.
- Stir in the sliced mushrooms, bell pepper, and carrot, cooking for another 5-7 minutes until the vegetables are tender.
- Pour in the vegetable broth and the prepared sauce, stirring until it thickens slightly.
- Add the cooked rice noodles to the pan, tossing everything together until well combined and heated through.
- Serve hot, garnished with chopped green onions and fresh cilantro.
