Ingredients

  • Rice noodles - 150 grams
  • Vegetable broth - 500 ml
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 2 tablespoons
  • Chili paste - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Tofu (firm) - 100 grams, cubed
  • Mushrooms (shiitake or enoki) - 100 grams, sliced
  • Bell pepper (red or yellow) - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 tablespoon
  • Cilantro - for garnish
  • Salt - to taste

Steps

  1. Cook the rice noodles according to package instructions, drain and set aside.
  2. In a small bowl, mix the soy sauce, rice vinegar, chili paste, and cornstarch with 2 tablespoons of water to make the sauce.
  3. In a large pan or wok, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sauté for about 1 minute until fragrant.
  4. Add the cubed tofu and cook for about 5 minutes until golden brown on all sides.
  5. Stir in the sliced mushrooms, bell pepper, and carrot, cooking for another 5-7 minutes until the vegetables are tender.
  6. Pour in the vegetable broth and the prepared sauce, stirring until it thickens slightly.
  7. Add the cooked rice noodles to the pan, tossing everything together until well combined and heated through.
  8. Serve hot, garnished with chopped green onions and fresh cilantro.
