  • Tofu (firm) - 100 grams, diced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Bell pepper (red or green) - 1 medium, sliced
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Cornstarch - 1 tablespoon (optional, for thickening)
  • Water - 200 milliliters
  • Sesame oil - 1 teaspoon
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Soak the rice noodles in warm water for about 10 minutes until softened, then drain and set aside.
  2. In a pot, heat the sesame oil over medium heat, then add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add the sliced mushrooms, carrot, and bell pepper to the pot and cook for about 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth, soy sauce, rice vinegar, and chili paste. Bring to a simmer and cook for an additional 10 minutes.
  5. Add the diced tofu and simmer for another 5 minutes.
  6. If a thicker broth is desired, mix the cornstarch with 2 tablespoons of water to create a slurry, then stir it into the soup and cook for an additional 2 minutes until thickened.
  7. Stir in the softened rice noodles and cook for another 2 minutes to heat through.
