- Mushrooms (shiitake or button) - 100 grams, sliced
- Carrot - 1 medium, julienned
- Bell pepper (red or green) - 1 medium, sliced
- Green onions - 2, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Cornstarch - 1 tablespoon (optional, for thickening)
- Water - 200 milliliters
- Sesame oil - 1 teaspoon
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Soak the rice noodles in warm water for about 10 minutes until softened, then drain and set aside.
- In a pot, heat the sesame oil over medium heat, then add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced mushrooms, carrot, and bell pepper to the pot and cook for about 5 minutes, stirring occasionally.
- Pour in the vegetable broth, soy sauce, rice vinegar, and chili paste. Bring to a simmer and cook for an additional 10 minutes.
- Add the diced tofu and simmer for another 5 minutes.
- If a thicker broth is desired, mix the cornstarch with 2 tablespoons of water to create a slurry, then stir it into the soup and cook for an additional 2 minutes until thickened.
- Stir in the softened rice noodles and cook for another 2 minutes to heat through.
- Season with black pepper to taste, and garnish with chopped green onions and fresh cilantro before serving.
