Ingredients
- Jasmine rice - 1 cup (200g)
- Water - 2 cups (500ml)
- Soy sauce - 2 tablespoons (30ml)
- Sesame oil - 1 tablespoon (15ml)
- Vegetable oil - 1 tablespoon (15ml)
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Green peas - 1/2 cup (75g)
- Green onions - 2, sliced
- Corn - 1/2 cup (75g)
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then combine it with 2 cups of water in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, remove the pot from heat and let it sit covered for an additional 5 minutes to steam the rice. Fluff the rice with a fork and set aside.
- In a large pan or wok, heat the vegetable oil over medium heat. Add minced garlic and ginger, and sauté for about 1 minute until fragrant.
- Add the diced carrots and bell pepper to the pan. Stir-fry for about 3-4 minutes until they begin to soften.
- Stir in the green peas and corn, cooking for another 2-3 minutes until heated through.
- Add the cooked rice to the pan, breaking apart any clumps. Pour in the soy sauce and sesame oil, and stir well to combine all ingredients evenly.
- Season with salt and black pepper to taste. Stir in the sliced green onions and cook for an additional 2 minutes.
