Ingredients

  • Jasmine rice - 1 cup (200g)
  • Water - 2 cups (500ml)
  • Soy sauce - 2 tablespoons (30ml)
  • Sesame oil - 1 tablespoon (15ml)
  • Vegetable oil - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Green peas - 1/2 cup (75g)
  • Green onions - 2, sliced
  • Corn - 1/2 cup (75g)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then combine it with 2 cups of water in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  2. After 15 minutes, remove the pot from heat and let it sit covered for an additional 5 minutes to steam the rice. Fluff the rice with a fork and set aside.
  3. In a large pan or wok, heat the vegetable oil over medium heat. Add minced garlic and ginger, and sauté for about 1 minute until fragrant.
  4. Add the diced carrots and bell pepper to the pan. Stir-fry for about 3-4 minutes until they begin to soften.
  5. Stir in the green peas and corn, cooking for another 2-3 minutes until heated through.
  6. Add the cooked rice to the pan, breaking apart any clumps. Pour in the soy sauce and sesame oil, and stir well to combine all ingredients evenly.
  7. Season with salt and black pepper to taste. Stir in the sliced green onions and cook for an additional 2 minutes.
  8. Serve hot and enjoy your delicious vegan fried rice!
