Ingredients

  • All-purpose flour - 100 grams
  • Vegan butter - 50 grams
  • Cold water - 2 tablespoons
  • Silken tofu - 150 grams
  • Nutritional yeast - 2 tablespoons
  • Soy milk - 50 ml
  • Maple syrup - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Cornstarch - 1 tablespoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the all-purpose flour and a pinch of salt. Cut in the vegan butter using a fork or pastry cutter until the mixture resembles coarse crumbs.
  3. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 15 minutes.
  4. While the dough is chilling, prepare the filling. In a blender, combine silken tofu, nutritional yeast, soy milk, maple syrup, turmeric powder, vanilla extract, cornstarch, and a pinch of salt. Blend until smooth and creamy.
  5. Remove the dough from the fridge and roll it out on a floured surface to about 3mm thick. Cut out circles to fit into your tart molds.
  6. Press the dough circles into the tart molds, ensuring they cover the bottom and sides evenly. Prick the bottoms with a fork to prevent bubbling.
  7. Pour the tofu filling into each tart shell, filling them about 3/4 full.
  8. Bake in the preheated oven for 25-30 minutes, or until the filling is set and the crust is lightly golden.
  9. Allow the tarts to cool for a few minutes before removing them from the molds. Serve warm or at room temperature.
