Vegan Egg Tarts

Ingredients
- All-purpose flour - 100 grams
- Vegan butter - 50 grams
- Cold water - 2 tablespoons
- Silken tofu - 150 grams
- Nutritional yeast - 2 tablespoons
- Soy milk - 50 ml
- Maple syrup - 1 tablespoon
- Turmeric powder - 1/2 teaspoon
- Vanilla extract - 1/2 teaspoon
- Cornstarch - 1 tablespoon
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the all-purpose flour and a pinch of salt. Cut in the vegan butter using a fork or pastry cutter until the mixture resembles coarse crumbs.
- Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 15 minutes.
- While the dough is chilling, prepare the filling. In a blender, combine silken tofu, nutritional yeast, soy milk, maple syrup, turmeric powder, vanilla extract, cornstarch, and a pinch of salt. Blend until smooth and creamy.
- Remove the dough from the fridge and roll it out on a floured surface to about 3mm thick. Cut out circles to fit into your tart molds.
- Press the dough circles into the tart molds, ensuring they cover the bottom and sides evenly. Prick the bottoms with a fork to prevent bubbling.
- Pour the tofu filling into each tart shell, filling them about 3/4 full.
- Bake in the preheated oven for 25-30 minutes, or until the filling is set and the crust is lightly golden.
- Allow the tarts to cool for a few minutes before removing them from the molds. Serve warm or at room temperature.
