Ingredients

  • All-purpose flour - 200 grams
  • Water - 100 ml
  • Chives - 50 grams, finely chopped
  • Mushrooms (shiitake or button) - 100 grams, finely chopped
  • Tofu (firm) - 100 grams, crumbled
  • Carrot - 50 grams, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a mixing bowl, combine the all-purpose flour and water, knead until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.
  2. In a skillet over medium heat, add a splash of water or a teaspoon of oil and sauté the minced garlic and grated ginger for about 1 minute until fragrant.
  3. Add the finely chopped mushrooms, crumbled tofu, grated carrot, and chopped chives to the skillet. Stir in the soy sauce, sesame oil, salt, and black pepper. Cook for about 5-7 minutes until the vegetables are tender. Remove from heat and let the filling cool.
  4. After the dough has rested, divide it into small balls (about 20 grams each). Roll each ball into a thin circle on a floured surface.
  5. Place a small spoonful of the filling in the center of each dumpling wrapper. Fold the wrapper in half and pinch the edges to seal, creating a half-moon shape. Use pleats for a decorative touch if desired.
  6. Prepare a steamer and steam the dumplings over boiling water for about 10-12 minutes until cooked through.
  7. Serve hot with a dipping sauce made from soy sauce and a dash of sesame oil.
