Ingredients

  • Whole wheat noodles - 150 grams
  • Sesame paste (tahini) - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Chili oil - 1 tablespoon
  • Fresh ginger, grated - 1 teaspoon
  • Garlic, minced - 2 cloves
  • Sichuan peppercorns, crushed - 1 teaspoon
  • Scallions, chopped - 2 stalks
  • Cilantro, chopped - 2 tablespoons
  • Cucumber, julienned - 1 small
  • Carrots, julienned - 1 small
  • Peanuts, crushed - 3 tablespoons
  • Water - 250 ml

Steps

  1. Cook the whole wheat noodles according to package instructions, then drain and rinse with cold water to stop cooking. Set aside.
  2. In a small bowl, mix together the sesame paste, soy sauce, rice vinegar, chili oil, grated ginger, and minced garlic until well combined.
  3. In a pan, heat a small amount of oil over medium heat and add the crushed Sichuan peppercorns. Stir for about 30 seconds until fragrant.
  4. Add the sesame sauce to the pan and stir in 250 ml of water. Simmer for 2-3 minutes until the sauce thickens slightly.
  5. In a large bowl, combine the cooked noodles, julienned cucumber, julienned carrots, and half of the chopped scallions and cilantro.
  6. Pour the sauce over the noodle mixture and toss well to combine, ensuring everything is evenly coated.
  7. Serve the noodles in bowls, topped with crushed peanuts, remaining scallions, cilantro, and an extra drizzle of chili oil if desired.
