Ingredients

  • Whole wheat noodles - 150 grams
  • Sesame paste - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Chili oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Maple syrup - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Scallions - 2, chopped
  • Cucumber - 1, julienned
  • Carrots - 1, julienned
  • Tofu - 100 grams, crumbled
  • Bok choy - 100 grams, chopped
  • Peanuts - 2 tablespoons, crushed
  • Fresh cilantro - for garnish

Steps

  1. Cook the whole wheat noodles according to package instructions, then drain and set aside.
  2. In a bowl, mix the sesame paste, soy sauce, chili oil, rice vinegar, maple syrup, minced garlic, and grated ginger to create the sauce.
  3. In a pan over medium heat, sauté the chopped bok choy until wilted, about 3-4 minutes.
  4. Add the crumbled tofu to the pan and cook for an additional 5 minutes until heated through.
  5. Combine the cooked noodles with the sautéed bok choy and tofu in the pan, then pour the sauce over the mixture. Toss well to combine.
  6. Serve the noodles topped with julienned cucumber, carrots, chopped scallions, crushed peanuts, and fresh cilantro.
