- Cucumber - 1, julienned
- Carrots - 1, julienned
- Tofu - 100 grams, crumbled
- Bok choy - 100 grams, chopped
- Peanuts - 2 tablespoons, crushed
- Fresh cilantro - for garnish
Steps
- Cook the whole wheat noodles according to package instructions, then drain and set aside.
- In a bowl, mix the sesame paste, soy sauce, chili oil, rice vinegar, maple syrup, minced garlic, and grated ginger to create the sauce.
- In a pan over medium heat, sauté the chopped bok choy until wilted, about 3-4 minutes.
- Add the crumbled tofu to the pan and cook for an additional 5 minutes until heated through.
- Combine the cooked noodles with the sautéed bok choy and tofu in the pan, then pour the sauce over the mixture. Toss well to combine.
- Serve the noodles topped with julienned cucumber, carrots, chopped scallions, crushed peanuts, and fresh cilantro.
