Ingredients

  • All-purpose flour - 250 grams
  • Active dry yeast - 7 grams
  • Granulated sugar - 30 grams
  • Coconut milk - 120 ml
  • Warm water - 60 ml
  • Coconut oil - 30 grams (melted)
  • Salt - 1/2 teaspoon
  • Desiccated coconut - 50 grams
  • Maple syrup - 30 grams
  • Vanilla extract - 1 teaspoon

Steps

  1. In a small bowl, combine warm water, active dry yeast, and 10 grams of sugar. Stir gently and let it sit for about 5-10 minutes until frothy.
  2. In a large bowl, mix the all-purpose flour, remaining sugar, and salt. Create a well in the center and add the yeast mixture, melted coconut oil, and coconut milk.
  3. Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. While the dough is rising, prepare the filling by mixing desiccated coconut, maple syrup, and vanilla extract in a bowl until well combined.
  6. Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a small circle, about 10 cm in diameter.
  7. Place a spoonful of the coconut filling in the center of each circle, fold the edges over, and pinch to seal.
  8. Place the filled buns seam side down on a parchment-lined baking tray, cover, and allow them to rise for another 30 minutes.
  9. Preheat the oven to 180°C (350°F). Bake the buns for 15-20 minutes or until golden brown.
  10. Remove from the oven, let cool slightly, and serve warm.
